Last night we brewed a modified Scotch Ale recipe. We picked up a Scotch Ale kit from Kirk's Brew, but added in a 1/4 lb of Special B Malt, an additional 3.3 lb of Amber LME, and changed the hop schedule from 60 minute boil of 2 oz of Goldings to 2 oz of Challenger hops; 20 minute boil of 1/2 oz Goldings changed to 20 minutes of 2 oz of Goldings, and we're dry hopping with the remaining 1/2 oz of Goldings. Also added in 2 lb of dark brown sugar to round out the malt and sweetness of the increased fermentables.
It's going to be STRONG, PABV was over 11%! It will probably take some time for this one to condition out properly, but I think it'll be worth the wait.
We weren't going to brew tomorrow (I'm signing the lease on my farmhouse tomorrow!!!), but I might swing over to Kirk's and pick up a Red Ale to modify a bit (I ran out of homebrew and I have 15 gallons sitting in primaries and secondaries, what the heck!), and our honey nut brown ale still needs AT least a week more to condition before I can consciously crack a bottle.
